White Bean Bruschetta with Basil

The 4th of July holiday weekend is approaching! This weekend is going to be a super hot one where I live. So this White Bean Bruschetta with Basil is the perfect appetizer to make! With just a few, simple ingredients, it literally takes a few minutes to whip together. And it is always the hit of a party!


White Bean Bruschetta with Basil

Ingredients:

1 (15.5 oz.) can of cannellini beans, drained and rinsed

2 cloves of garlic

3 tbsp olive oil

2 tbsp balsamic vinegar

1/2 to 3/4 tsp red pepper flakes

1/8 tsp kosher salt

2 tbsp fresh basil, chopped

  1. Place the garlic cloves into the food processor and pulse until the garlic is finely minced.

  2. Scrape down the sides of the food processor and add the beans, olive oil, balsamic vinegar, red pepper flakes and salt. Pulse it a few times until it all comes together and is mixed well. You still want the beans to be in small pieces.

  3. Fold in 1 1/2 tablespoons of fresh basil. Stir until combined.

  4. Spread this onto the Crostini and garnish the top with the rest of the fresh basil.

I always keep a can of cannellini beans in my pantry so that I can whip together this quick and easy appetizer. The crunch of the crostini is perfect for this White Bean Bruschetta with Basil. It is also delicious served with celery, peppers, cucumbers and carrots as a dip! Everyone always loves this fresh taste of this appetizer!
