Busy weeks call for simple and easy meals. This is one of my favorites! All of the favors of Italy are in this delicious toasted open faced sandwich...basil, spinach, prosciutto, fresh mozzarella and tomatoes! So yummy!
It takes just minutes to make and it's perfect for lunch or dinner. Plus you can turn it into an easy and perfect appetizer by just slicing it up into strips. Every one always loves this Toasted Italian Open Faced Sandwich!
Toasted Italian Open Faced Sandwich
Ingredients:
Italian or sourdough bread slices
Pesto
Baby spinach
Prosciutto
Fresh mozzarella, sliced thin
Fresh cracked pepper
Grape tomatoes, halved
Optional: red pepper flakes
Preheat your oven to 375 degrees.
Line a sheet pan with parchment paper.
Place the bread slices onto the pan.
Spread each piece of bread with a layer of pesto.
Place a pile of baby spinach on top of the bread.
Add one or two slices of prosciutto to each slice of bread.
Place a few slices of mozzarella cheese on top of the prosciutto.
Add some fresh cracked pepper and red pepper flakes (if desired) on top.
Place the tomato halves on top, cut side down.
Bake at 375 degrees for 10 to 12 minutes, until bubbling and nice and toasted.
And fresh out of the oven...
Eat it for dinner! Or slice it up for an easy and delicious appetizer...
