If you love Mexican food, you will love this super easy Slow Cooker Fiesta Chicken recipe! Just put all of the simple ingredients in slow cooker in the morning, let it cook all day and you will have an easy and healthy dinner.
This Fiesta Chicken is the perfect filling for tacos, burritos, lettuce or quesadillas. It is also delicious on top of a salad or in a protein bowl. There is nothing better than an easy and healthy crock pot meal!
Slow Cooker Fiesta Chicken
Ingredients:
2 or 3 boneless chicken breasts (about 1.5 lbs.)
1 (16 oz.) jar of salsa
1 (10 oz.) can of diced tomatoes with green chilies
1 (15 oz.) can of corn (or 2 cups of frozen corn)
1 (15 oz.) can of black beans, drained and rinsed
1/2 tsp. kosher salt
1/2 tsp. garlic powder
1/2 tsp. oregano
1/2 tsp. chili powder
1 tsp. ground cumin
1/2 tsp. paprika
3/4 cup water
Place the salsa, diced tomatoes, black beans and water into your slow cooker and stir to combine.
Add all of the spices and stir.
Place the chicken breasts into your slow cooker and spoon the sauce over the top.
Cover with the lid and cook on low for 8 hours.
Take the chicken out of your slow cooker and place on a plate. Shred the chicken by using two forks.
Add the shredded chicken back into the slow cooker and stir until it is mixed well with all of the other ingredients.
