This fast meal is so perfect for the nights when you just aren't in the mood to cook. And it couldn't be easier! I love this delicious blush sauce! You can make it quickly while you are waiting for the pasta water to come to a boil. Using tomatoes and basil from my garden gives this dish a light and fresh taste! A perfect, easy, fast and inexpensive meal that you will love!
Pasta with Fresh Blush Sauce
Ingredients:
1 tbsp olive oil
3 garlic cloves, minced
1 (28 oz.) can of crushed tomatoes
1 tsp sugar
1 cup fresh tomatoes, diced
1/2 to 3/4 cup heavy cream
3/4 tsp kosher salt
1/2 tsp fresh cracked pepper
1/4 cup fresh basil, chopped
16 oz. cooked pasta, undercooked by 2 minutes
Heat up olive oil over medium heat and then add the garlic. Cook the garlic for one minute.
Add the crushed tomatoes and stir.
Add the salt, pepper and sugar.
Add the fresh tomatoes and the heavy cream. I was feeling decadent today so I added the full 3/4 cup!
Stir until combined. When the sauce is heated add the cooked pasta and finish cooking the pasta in the sauce until it is al dente.
Finish the sauce by stirring in the fresh basil and serve right away. It is also delicious with some fresh Parmesan cheese on top!
Just look at those garden fresh tomatoes and basil! This truly is one of my favorite sauces ever!!
