Mom's Blueberry Pie


Thinking back to our road trip to Acadia National Park two summers ago made me so hungry for blueberry pie. It was amazing to see how many wild blueberries there were in Maine! We loved picking them and loved that area's blueberry jams, ice cream and pies.


My most favorite pie ever is my mom's blueberry pie! She makes the best blueberry pie ever! The key to her amazing pie is the crust...it is a thin, light and crisp crust that goes perfectly with the warm, gooey, sweet blueberries and cold vanilla ice cream! You are going to want to eat this pie warm in a bowl so the flavors can all melt together! This pie just reminds me of summertime!


Blueberry Pie

Crust Ingredients:

2 cups flour

1/3 cup Crisco

5 tbsp ice cold water

1 1/2 tsp salt


Filling Ingredients:

2 pints blueberries, washed and dried

1 cup sugar

3 tbsp flour


Vanilla Ice Cream


  1. Put the flour, salt and Crisco into a food processor and pulse it until the mixture is like a coarse cornmeal.

  2. Add the ice cold water one tablespoon at a time and pulse after each spoonful, until the pie dough comes together.

  3. Divide the pie dough into two pieces and shape each one into a ball.

  4. Take a sheet of waxed paper and put the ball of dough on the middle of it.

  5. Flatten the dough ball with the palm of your hand so that it forms a disk.

  6. Take another piece of waxed paper and put it on top.

  7. Roll out the dough until it is a thin "circle" shape and repeat this with the other dough ball. Set aside.

  8. Mix together the blueberries, sugar and flour for the filling in a bowl.

  9. Carefully put the bottom pie crust into the pie pan and press around the sides of the pie dish.

  10. Spoon in the pie filling and place the top piece of crust on top of the pie.

  11. Crimp together the edges and pierce the top crust with a fork.

  12. Bake at 400 degrees for 15 minutes.

  13. Do not open the oven door. But turn down the oven to 350 degrees and bake for another 45 minutes, until crust is golden.

  14. Allow to cool for about an hour.

  15. Serve warm, in a bowl with a scoop of vanilla ice cream.


Just look at how those delicious flavors just melt together!















Growing up my mom always said, "it's not the prettiest pie, but it is the tastiest pie". And she is so right on this one! Just wait until you try it! It is the best blueberry pie EVER!
