Part of my New Year's resolution was to eat more fruits and vegetables. Well, I went a little over the top and bought more peppers than we could ever possibly eat! They were on sale so I bought a ton. We love these mini sweet peppers but I definitely went a little crazy.
I do not like to let any food go to waste so I made sure to freeze them before they spoiled. Now making fajitas, sausage and peppers, a quiche, a stir fry or omelettes will be super easy to cook with these peppers prepped and ready to go in the freezer! Here's how...
How to freeze peppers:
Wash and dry your peppers.
Cut the peppers in half, remove the seeds and cut the peppers into strips.
Place the pepper strips on to a sheet pan, in a single layer.
Place this sheet pan in your freezer and freeze overnight.
Take the sheet pan out of the freezer and place the frozen pepper strips into a freezer Ziploc bag.
Place your Ziploc bag full of frozen pepper strips into the freezer for storage.
Now the next time that you want to cook with peppers, it will be so easy!
