Grilled "Weight Watchers" Ratatouille

Did you know that you can make Ratatouille with no oil or butter?! Totally fat free! It is amazing! When you cook it this way, over the grill, the natural juices from the vegetables cook together in the foil pocket. Making this the healthiest and yummiest grilled vegetable side dish with zero fat. All of these vegetables are in season and the fresh flavors just go together perfectly!


Grilled "Weight Watchers" Ratatouille

Ingredients:

Zucchini, sliced

Grape tomatoes, halved

Onion, sliced

Garlic, minced

Salt and fresh pepper to taste

Fresh thyme

Fresh basil, chopped

Aluminum foil

Optional: diced eggplant


  1. Place the vegetables and garlic on a large sheet of aluminum foil.

  2. Season the vegetables with salt and pepper.

  3. Add the basil and thyme.

  4. Place another piece of foil over top of the vegetables and crimp the edges to make a foil pocket. You want to seal it tightly so that the vegetables steam and form that delicious and fat free sauce.

  5. Place the veggie filled foil pocket onto the grill and cook for 10 to 15 minutes, depending on how hot your grill or fire is.


You will know when they are done when the vegetables have softened and have all cooked together to form a fat free and natural sauce.






I love to make this dish when we camp! Having no pots to wash makes it great while camping and at home! You will love these fresh flavors!
