Happy Friday! I don't know about you but I am hanging onto each and every last minute of summer! I am not ready for it to end. We had a gorgeous day here and it has me dreaming of a tropical beach drink.
So for my special Friday night cocktail, I am making a Frozen Tropical Fruit Cocktail. It is so refreshing and tastes like a beach getaway! I might not be at the beach tonight but I can sip and dream of hearing those ocean waves and soaking in the sun's rays, with my toes in the sand! The best!

Frozen Tropical Fruit Cocktail
(Makes two servings)
Ingredients:
2 1/2 cups frozen tropical fruit
3/4 cup pineapple juice
4 oz. spiced rum (can substitute vodka too)
Add the frozen fruit, pineapple juice and spiced rum to the blender. Turn on the blender and mix until it is nice and smooth. Pour into two glasses.
Enjoy right away and dream of a tropical or beachside getaway! Someday!! Ahhhh! Cheers!
