I don't know about you but I am hanging onto each and every last minute of summer! I am not ready for it to end. I am back from a beach vacation and came to the realization that I need more frozen cocktails at home this summer! Afterall, frozen cocktails aren't just for the beach, right?
So, I am making a Frozen Tropical Fruit and Rum Cocktail. It's so refreshing and tastes like a beach getaway! I might not be at the beach tonight but I can sip and dream of hearing those ocean waves and soaking in the sun's rays, with my toes in the sand! The best!

Frozen Tropical Fruit and Rum Cocktail
(Makes two servings)
Ingredients:
2 1/2 cups frozen tropical fruit(I love the one from Aldi)
3/4 cup pineapple juice
4 oz. spiced rum (can substitute vodka too)
Add the frozen fruit, pineapple juice and spiced rum to the blender. Turn on the blender and mix until it is nice and smooth. Pour into two glasses.
Enjoy right away and dream of a tropical or beachside getaway! Ahhhh! Cheers! Take in each and every last minute of summer! It's my favorite time of the year!
