Easy Meatloaf with the BEST Glaze

There is a chill to the air and it definitely feels like fall is here! That means that it's time to make one of my husband's favorite comfort food dinners...meatloaf!


Meatloaf is absolutely his favorite! All of my guys love it! It's perfect for a chilly night and the leftovers are even better! This recipe is so easy to make but what makes it the best is the amazing glaze that coats the meatloaf and caramelizes it as it bakes. It's so delicious!


This is such an easy dinner - I really should make it more often during these chilly months!


Easy Meatloaf with the BEST Glaze

Ingredients:


Glaze:

2 tbsp brown sugar

2 tbsp ketchup

2 tbsp yellow mustard


Meatloaf:

1 envelope onion soup mix

1/4- 1/2 tsp garlic powder

1 tsp Worcestershire sauce

2 lbs ground beef

3/4 cup breadcrumbs

2 eggs, lightly beaten

1/2 cup ketchup

1/4-1/2 tsp pepper

Optional: 1/2 of an onion, minced finely(we like a little extra onion but it's just as delicious without)


  1. Preheat oven to 350 degrees.

  2. In a bowl, combine all of the meatloaf ingredients with your hands until combined.

  3. Spray a 9×13" pan with cooking spray (or you can line it with foil or parchment paper for easy clean up).

  4. Form the meat mixture into a loaf.

  5. Combine glaze mixture in a bowl and brush generously over the meatloaf.

  6. Bake the meatloaf for 1 hour to 1 hour and 15 minutes. Or until the internal temperature is 160 degrees and the center is cooked through.

  7. Let the meatloaf rest for about 10 minutes before slices. This will help it to slice better.

Fresh out of the oven...

Is this "comfort food on a plate", or what?! We always serve peas and mashed potatoes with our meatloaf dinner for the perfect trifecta! These flavors and textures go together perfectly!
