Crustless Mediterranean Quiche

I love to make quiches with no crusts. Then I can have an easy, healthy and guilt free meal whenever I want. This Crustless Mediterranean Quiche has the most amazing combination of flavors and it is a great way to get a huge serving of healthy vegetables. Plus it takes just minutes to prepare since you do not have to precook any of the vegetables before baking.


I love to make this at the beginning of the week and then I can have it for an easy breakfast, brunch or lunch. It is so delicious and it is one of my favorite quiche recipes! If you love Mediterranean flavors, you will love this crustless quiche!


Crustless Mediterranean Quiche

Ingredients:

1 (14 oz.) can or jar of artichoke hearts, drained and chopped

1 garlic clove, minced

1 cup of baby spinach, chopped

1/2 cup of bell peppers, diced

2 green onions, diced

1/4 cup of pitted Kalamata olives, sliced

1 (4 oz.) container of reduced fat feta cheese, divided in half

6 eggs, beaten

3/4 cup milk

1/2 tsp dried oregano

A pinch of salt

Fresh ground pepper to taste


  1. In a bowl, toss together the artichokes, garlic, spinach, peppers, green onions and Kalamata olives.

  2. Fold in half of the feta cheese.

  3. Spray a pie dish with cooking spray.

  4. Pour the vegetable and cheese mixture into the prepared pie dish and spread it out evenly.

  5. Whisk together the eggs, milk, oregano, salt and pepper together in a bowl.

  6. Pour the egg mixture evenly over the vegetables in the pie dish.

  7. Top with the remaining feta cheese and some extra olive slices, if you would like.

  8. Bake at 350 degrees for about 35 to 40 minutes, until the quiche is puffed and golden.









Just look at all of those wonderful Mediterranean flavors coming together in one simple crustless quiche! Yum!
