Creamy Tomato Pasta with Crispy Prosciutto and Peas

September 24, 2020

It is that time of the year...I went from a lazy spring and summer to a crazy, sports filled schedule. I love it and will never complain again after having no sports at all last spring. Some nights I need to get dinner on the table fast and tonight was one of those nights. It is getting chilly at night so I thought that a pasta dish would be a perfect comfort food dinner!

This delicious dinner is so easy to make! The sauce literally cooks as the pasta is boiling. It couldn't be easier! The crispy and salty prosciutto goes perfectly with this incredible, creamy tomato sauce. And the conchiglie pasta is perfect for this recipe as it naturally scoops up all of the sauce and peas. My guys loved it and ate up every last bite! And I love how quickly it cooked. A win-win for all!

Creamy Tomato Pasta with Crispy Prosciutto and Peas

Ingredients:

8 oz. Prosciutto (approximately 14 thin slices), cut into 1 inch pieces

2 tbsp olive oil

1/2 onion, diced finely

2 cloves garlic, minced

28 oz. can diced tomatoes

1 tbsp sugar

3/4 tsp basil

1/2 tsp oregano

Salt and pepper to taste

8 oz. cream cheese, diced

2 cups frozen peas

16 oz. Conchiglie or Bow Tie Pasta, cooked according to directions

Optional: Fresh basil to garnish

  1. Cook the prosciutto in a dry pan for a few minutes, until it gets nice and crispy. Set aside.

  2. Heat up the olive oil in a large skillet and sauté the onion on medium heat, until it turns translucent.

  3. Add the garlic and cook for 45 seconds, stirring constantly.

  4. Add the diced tomatoes, pepper, sugar, basil and oregano to the skillet and stir. I wait until the end to add the salt as the prosciutto is pretty salty.

  5. Add the cream cheese to the tomato mixture and stir, until all of the cheese is melted and the sauce is nice and creamy.

  6. Add the peas and stir until the peas are cooked through.

  7. Add the cooked pasta and prosciutto to the sauce and stir until it is all combined. Taste to see if you would like any salt.

  8. Add some fresh chopped basil for a nice fresh taste and enjoy right away.

You will love each and every bite of this!! I love it when a new and easy recipe becomes an instant favorite for my family! We will be eating this a lot during this busy fall. I am already craving it again!
