I love this cake recipe so much! It is an easy and delicious cake to make for your Memorial Day weekend. The red, white and blue colors are perfect for this patriotic holiday weekend.
And this cake is super versatile - it is great as a breakfast cake or as a dessert!
Blueberry and Strawberry Bundt Cake
Ingredients:
1 stick of butter, softened
2 cups sugar
3 eggs
1 1/2 cups milk
1 tsp vanilla
3 cups flour
1/4 tsp salt
2 1/2 tsp baking powder
1 cup blueberries
1 cup strawberries, diced
Preheat oven to 350 degrees.
Sift together your flour, salt and baking powder in a bowl. If you don't have a sifter, just give a good stir with a fork.
In a mixing bowl, cream the butter, sugar and eggs together.
Add the vanilla and milk and mix some more.
Slowly add the bowl of dry ingredients to the mixer. Careful not to over beat.
Add the berries to the bowl and fold them in lightly.
Spray a Bundt pan with cooking spray.
Pour the cake batter into the Bundt pan.
Bake for 55, until a toothpick comes out clean when inserted.
Let the pan rest for 20 minutes and then carefully flip onto a platter.
Enjoy as a delicious breakfast cake, with coffee! Or as a delicious Memorial Day dessert!
