Baked Parmesan Breaded Chicken

Fried, breaded chicken is one food that my boys could eat every day! I love it too! But I do not like the added fat and calories that cooking them in oil adds. So, I bake them in the oven now and they are so delicious!


Baked Parmesan Breaded Chicken

Ingredients:

6 thin chicken breasts

1 cup flour

2 eggs, beaten

1/2 cup Parmesan cheese

1 cup Italian seasoned breadcrumbs

Salt and pepper to taste

Garlic Salt

Olive oil spray


  1. Place the flour and beaten eggs into two separate shallow dishes.

  2. Combine the Parmesan cheese and breadcrumbs in a shallow dish.

  3. Season both sides of the chicken breasts with salt, pepper and garlic salt.

  4. Dip a chicken breast into the flour and flip so that both sides are coated.

  5. Take the flour coated chicken breast and dip both sides into the eggs.

  6. Now dip the chicken into the breadcrumb mixture and flip, making sure that there is a good coating of breadcrumbs on both sides.

  7. Place the breadcrumb coated chicken breast onto a parchment paper lined sheet pan, that has been sprayed with olive oil spray.

  8. Repeat the above steps until all of the chicken breasts are on the sheet pan.

  9. Spray the tops of the chicken breasts with olive oil spray.

  10. Bake at 350 degrees for 15 minutes.

  11. Flip the chicken breasts and bake for an additional 10-15 minutes until golden.









Just look at that delicious, golden breaded chicken! You will not miss the extra oil or calories at all! And will love how light it tastes! I love it on a bed of arugula with Parmesan cheese and a squeeze of a lemon. My boys love it, as is.
