Apple and Cinnamon Breakfast Casserole

Weekends are for lazy mornings, hot coffee and a yummy breakfast. I love breakfast casseroles because they are so easy to make. You can prep this one the night before and just toss in the apples in the morning, right before cooking.


This Apple and Cinnamon Breakfast Casserole makes your house smell incredible as it bakes! The smell of cinnamon and apples is the best! They are such a perfect combination of flavors for an easy and yummy breakfast treat!


Apple and Cinnamon Breakfast Casserole

Ingredients:

6 cups bread, cubed (about 16 slices)

2 apples, skins taken off and finely diced

6 eggs, beaten

1 cup whole milk

1 tsp vanilla

3/4 cup brown sugar

1 tsp cinnamon


  1. Preheat oven to 350 degrees.

  2. Mix together the brown sugar and cinnamon in a bowl.

  3. In another bowl, whisk together the eggs, milk and vanilla.

  4. Spray a 9"x13" casserole dish with cooking spray.

  5. Add half of your bread and apples to the dish.

  6. Take half of your brown sugar and cinnamon mixture and sprinkle evenly over the bread and apples.

  7. Repeat with the other half of the bread, apples and brown sugar and cinnamon mixture.

  8. Ladle the egg mixture over the bread trying to cover it all.

  9. Bake, uncovered, for 40-45 minutes. Until it is puffed and golden. Serve warm.


It is sweet enough, as is but it is also delicious with a little bit of maple syrup drizzled over the top!

This Apple and Cinnamon Breakfast Casserole is such a great way to start your day. And the leftovers are equally delicious! Aren't breakfast casseroles the best?
