We are back from camping and are super low on groceries. The one thing that we do always have on hand are bread, eggs and cheese. My family loves "Brinner"! So "breakfast for dinner" it is!
I recently saw a video on Instagram., inspired by a vending truck, on how to make a quick breakfast sandwich. Maybe it was Food Network? Regardless, I was so inspired but wanted to make it even easier to make. I love to make breakfast sandwiches because they are so inexpensive to serve and they are my boys favorite! I love how this recipe takes the toasting out of the equation and makes it all in one skillet! It is amazingly delicious!! And so quick and easy!
New Kind of Breakfast Sandwich
Ingredients:
2 eggs, beaten
1 tbsp milk
Optional: green onions and jalapeños, diced
Salt and pepper to taste
1tbsp butter
2 slices of bread
1 to 2 slices of cheese
Melt the butter in a nonstick skillet over medium heat.
While the butter is melting, whisk together the eggs, milk, salt and pepper. Optional: add green onions and jalapeños.
When the skillet gets nice and hot, add the egg mixture.
Quickly add the two slices of bread to the skillet.
And quickly flip the bread so that both sides of the bread are coated in egg.
When the eggs start to set up a bit, take a knife and cut the eggs in half, in between the bread slices.
Carefully flip each half and add the cheese on top of the bread slice.
Now take each edge of the eggs that are hanging over the bread slice and fold over top of the cheese.
Flip one piece of bread over top so that both cheese sides are on the inside. Like a grilled cheese.
Cook on that side until it is golden brown.
Flip and cook on the other side until it is a perfect golden brown too.
Serve right away as it is best when it is nice and hot.
I wish that I knew and could thank the vending truck who came up with cooking a breakfast sandwich this way because it was a huge hit with my family!! Another recipe to add to our "breakfast for dinner" nights! We love Brinner!
